How to make Crystallized Ginger for baking a cake at home?

I just found this recipe for Pumpkin Angel Food Cake with Ginger Cream Filling.

I was wondering since I cannot find any at the store, like Walmart......If I could possibly make my own at home, just by using a simple syrup and adding some McCormick Ground Ginger, I already had here at home, and let that cook down to almost a candy hard tack and after it cooled crumble that up ?

If I can do it this way, I like to know........how much ground ginger I add to the simple syrup ????????????

  • crystallized ginger is made out of chunks of ginger, not from powdered ginger.

    it is in the spice section of most grocery stores ( not all) but especially around the holidays.

  • You should be able to find Crystallized Ginger at most large supermarkets - Safeway, Kroeger, etc,. It would probably be with the candied fruits for making fruitcake. I doubt you would find it at WalMart, You would also find it at any place the sells hard to find items like Trader Joe's, if there is one in your area.

    You can make it at home, but you will need gingerroot, not ground ginger. Below is a recipe. My take is to try the markets, but this should work for you.

    Crystallized or candied ginger is very easy to make at home with these instructions. Use in desserts and confections.

    Difficulty: Easy

    Time Required: 45 minutes

    Here's How:

    1. Peel and thinly slice 1 pound (500 grams) fresh gingerroot.

    2. Place sliced ginger in a heavy saucepan.

    3. Cover with water.

    4. Cook gently until tender, about 30 minutes.

    5. Drain off water.

    6. Weigh the cooked ginger and measure an equal amount of sugar.

    7. Return ginger to saucepan.

    8. Add sugar and 3 Tablespoons water.

    9. Bring to a boil, stirring often, and cook until ginger is transparent and liquid has almost evaporated.

    10. Reduce heat and cook, stirring constantly, until almost dry.

    11. Toss cooled ginger in sugar to coat.

    12. Store crystallized (candied) ginger in an airtight jar for up to 3 months.

  • I found this recipe for Ginger Syrup

    This is a lovely syrup to have on hand in your refrigerator. It complements ice cream, fresh fruit salads, French toast or waffles.

    Yields 3/4 cup

    1 1/2 cups water

    1 1/2 cups sugar

    6 ounces fresh ginger root

    1/8 teaspoon Chinese Five Spice

    Combine the water and sugar in a small pot and bring to a simmer.

    Slice the ginger root into thin pieces (no need to peel) and add to the sugar syrup.

    Over low heat, simmer the ginger root for 35 to 45 minutes, uncovered. When the syrup has reduced to about 3/4 cup, remove from heat and strain. Discard the ginger.

    Add the Chinese Five Spice to the hot syrup, stir to blend, and let cool.

    Store in a clean glass jar with a tight lid in the refrigerator. The Ginger Syrup will keep under refrigeration for up to 6 months.

    since the conversion for fresh ginger to ground ginger is 1Tbsp to 1/8tsp respectively, you will need to replace the fresh ginger with 1 and 1/2 Tbsp of ground ginger(you can lessen this to 1 1/4 Tbsp as the recipe calls for throwing away the ginger(heck you can even reduce it to 1Tbsp if it's a new batch of ground ginger).
